Pasta.

Primavera)
For as long as I can remember every
time my Nona (grandmother) came to visit, or we went and visited her, she would
make her "famous" pasta. She learned this recipe from an Italian
cooking instructor named Vera, whom she took lessons from. And once I was old
enough to cook taught it to me.
Pasta primavera means spring
pasta and is actually quite common, you'll find it in fancy restaurants on
fancy menus and they always find some way to "spice it up". But if you
ask me there's no better way to make it than this quick and easy
way.
Serves 4-6
- 16 cherry tomatoes, chopped.
- 3/4 cup olive oil.
- 1/2 cup parmesan cheese, grated.
- 10.5 oz. mozzarella cheese, chopped.
- 1/2 cup romano cheese, grated.
- 2-3 cloves, chopped.
- 2 tbsp. fresh basil.
- 1 1b. bow tie pasta.
(Variation. just use mozzarella
cheese. it still turns out great).
Cook pasta as instructed by
box and drain. Place pasta in a large bowl and add all other ingredients,
mixing well.
and that's it. enjoy this authentic Italian meal.
It just would not be a visit from Nona without her iconic pasta! It is delicious, and it keeps you coming back for more!
